Chili Cook Off at Edgewood Heritage Festival

Registration time for the annual (sanctioned) C.A.S.I. Chili Cookoff is 7:00 a.m. on L Street in downtown Edgwood.

C.A.S.I. Cookoff Chairmen are Gary & Sharon Bass
Entry Fee is $20.00 and Chili turn-in time is 2:00 p.m.

C.A.S.I. Chili Cook Off At Edgewood Texas Heritage FestivalCOOKOFFS: A charitable way to find the chili of the day. For over thirty years, chili cookoffs have served as a way to have fun, promote chili, and help others. Millions of dollars in proceeds from the chili cookoffs have been donated to charitable organizations and used to support charitable causes. Many charities benefit from these celebrations of chili.

CASI: A way to conduct a cookoff. As cookoffs transformed from tomfoolery to semi-serious competition, an organization known as CASI evolved. CASI developed formal rules and guidelines to encourage fair and impartial judging of chili and showmanship competition.

Rules: Why all these rules? Promoting fair and impartial judging of chili and showmanship prompted CASI’s system of rules and guidelines. These allow the best chili and show teams at cookoffs to be recognized. Cookoffs that use CASI rules are eligible for CASI sactioning. Through the CASI sactioning process, points for cookoff winners are recorded by CASI. Those who qualify are invited to the Terlingua International Chili Championship cookoff.

CASI Membership: CASI is made up of chiliheads from around the world who belong to local and area organizations called “Pods” . Each Pod elects a Great Pepper to represent it at the annual Great Peppers Meeting. The Great Peppers elect the CASI Board of Directors and Executive director who operate the organization worldwide.

Although one does not have to be a member of CASI to participate in a chili cookoff, CASI is the major organizational body of the chili world. For the name of the Pod nearest you, or to join CASI contact Alan Dean, CASI Executive Director, Johnson City, TX 512-567-2835.
